It’s not easy to get a table at Mozza. The first time we went, it was an impomptu treat from a regular and we had no idea of the privilege we had then. The next time, we called, hoping to get a reservation for the following evening, only to be told that we had to wait till the week after. So wait we did, and it didn’t disappoint. Make  sure you order lots of antipasti, they’re generally very good. We started with the chicken livers, capers, parsley and guanciale bruschetta ($17). The coarsely chopped liver paste on crisp toast is one of my favourite starters here, I love the not-quite pate texture of silky yet not completely smooth. The bacon crisp on top of guanciale (apparently bacon made from pork cheek) really was gilding the lily. Yummy. If you have space, also try the fagiole one, that’s pretty decent too.

It seems a bit of an overkill to order bread to go along with our starters especially after the bruschetta, but the  fett’unta ($6) was really quite something. It’s a peasant-style bread cooked in a pan with olive oil to a very crisp crust, very yummy but also on the oily side. Eat with plenty of the next starter…

… the prosciutto di parma and buffala mozzarella ($32). The buffala was creamy yet not heavy and was the perfect accompaniment to the salty prosciutto. We walloped it all with the bread. If you’re not so keen on ham, try the house made mozzarella with tomatoes, really excellent too.

The marinated baby peppers with tuna ($16), while decent, was a bit of a weak link. It tasted like a starter on a hotel buffet line, which is not to say it was bad, it simply didn’t blow anything out of the water. Over-priced.

We went for the pizza with ricotta, oyster mushrooms and shallots ($33). What I like about the pizzas here is that they are made to order and the ingredients are fresh, fresh, fresh. They even make their own ricotta in house. The ricotta was creamy and beautifully yielding, the perfect contrast to the crisp, fragrant bread base. Here, the pizza base is quite substantial, not the same as the thin crust variety that is so a la mode. This way, you get to really taste the bread and remember the pizza is in the end, bread with toppings, rather than toppings on a bread base.

For dessert, the three of us were quite full from all that bread, so we share the banana gelato pie ($17). It’s basically banana ice cream on a biscuit base that’s topped with whipped cream, dark caramel sauce and plenty of toasted hazelnuts. I liked how it wasn’t as tooth-achingly sweet as the butterscotch budino we tried the last time, but considering how it’s really just a slab of ice cream with caramel sauce and hazelnuts, it’s expensive, no?

Service-wise, this place is fairly OK as the staff are responsive and quick to take orders. I do, however, have the feeling that it’s not as good as when it first started. Maybe they aren’t able to retain good staff. Aside from that, though, there is this tendency for them to watch our plates like hawks and whip them off once empty, even if others at the table were still enjoying their food. Prevalent as the pratice is, I find that rather rude and offputting. I suppose they train their staff to do that to keep people moving. Doing that encourages people to finish quickly and get out, rather than lingering.

Considering how expensive this place is, I think it really takes away from the experience. I like the food, but I do not like the prices. I suppose one pays for the fresh produce and the privilege of dining at Marina Bay Sands.

Ice Cream Chefs

Ice Cream Chefs is a gem of an ice cream place that not only makes good ice cream, but also makes interesting flavours. Their specialty is the mix-ins, where they beat the ice cream to death on a refrigerated slab and wrestle in toppings like nuts and candy bars. We’d been here quite a few times and tried flavours like tau huey with almond mix-ins and apple with fruit pebble mix-ins.

This time we went, DC had cheese ice cream with honey star mix-in. It was a bizarre flavour that worked very well. Think cheese cake made with strong cheese and you’ve got the flavour of the ice cream. The sweet crunch of honey stars complemented it very well. Unfortunately more than a mouthful or two was enough for me, so I had to have my own.

I had the black sesame one, which was thick and rich and full of sesame flavour. It was as if they froze black sesame soup (the kind you get in Chinese desserts) into an ice cream. Very nice.

We also took away a tub of Kaya Lottee flavour, with waffles mixed in. It was delicately scented and very delicious. Thumbs up!

The Best Seafood Pasta Ever

DC and I found ourselves at Club Street one evening and he led me to an old haunt (to him). It was about time he introduced it to me!

Cugini is a charming little trattoria with colour-coordinated cyan menu covers matching the cyan chairs and cyan aprons worn by the waitstaff. Such a cute touch!  It’s dimly lit for the romantic feel and also to make food photos look less appetising despite my camera’s fabulous low light setting.

I liked how they added a little character to the ubiquitous bread basket by adding cherry tomatoes to the bread and providing a zingy horseradish dip. Yummy dip, though I’m not a big fan of how Italian bread tends to have a more collapsed texture compared to regular stuff. It’s probably because the bread is more proofed. DC loves it, so it’s just me!

I ordered the Pizza Fiorentina ($20.90), with spinach and egg on top. I was rather dismayed that the egg came fully cooked, looks like the wood-fired oven was that hot that they couldn’t cook it any gentler. It was a very decent rendition, with a substantial enough crust that was thin but not so thin as to make it difficult to hold up with the fingers for eating the barbaric way. I liked how rustic the thin crust was. That said, it’s something that absolutely had to be eaten piping hot from the pizza stone, otherwise it gets soggy and slightly stodgy. Also, the tomato sauce tasted like they didn’t do a great deal to canned tomatoes to make it. I haven’t got anything against canned stuff, but the tomato base on pizzas absolutely needs to taste fresh and zingy. This one didn’t quite hit the mark. All in all, a decent rendition, though not worth a special trip for.

Now what’s worth a special trip and an extra special mention is the phenomenal seafood spaghetti ($24.90). It’s off the menu and DC, having been there before, knew to ask. I tell you, it’s the best seafood pasta I’ve had in my life (at least as far as I remember). Oh my, it was the sauce that made it so incredibly. Where the tomato sauce on the pizza fell short, this one made up for it and more! It was thick, zesty and very full of flavour. There was plenty of clean seafood flavour, and probably a hint of white wine in it. I don’t know how the chef managed to pack so much seafood taste into the sauce, I could just eat the spaghetti and the sauce on its own… And talking about the spaghetti! Oh my, I thought I knew my al dente, but this al dente rocked my world. It was made so perfectly that the stars aligned at that point (and I probably should’ve gone to buy 4D). Let me attempt to describe it: there was chewy and yielding, there was tenderness, and there was noodle that was cooked through; it didn’t have a hint of durum hardness that you sometimes have to bear with for the sake of al dente, there was any sogginess that came with overcooking. This was, quite simply, the epitome of pasta and sauce. Now, it would’ve rated perfection in my books except for… the seafood. The fish was fresh and cooked just right, but the prawns were rather overdone and a bit meh. There wasn’t any other seafood, which was odd. I do love the crunch of slightly overcooked squid. So here’s my sad face about the seafood part not quite being up to par. But I must stress that the pasta and the sauce are probably the best thing that’s happened to me food-wise this year.

A Whirlwind Work Trip: Summertime in Paris

The next part of our trip brought us to Paris where we stayed at Le Grand Hotel, run by the InterContinental. It was indeed a nice hotel with typically Parisian and very opulent rooms. There were soft beds (which my head of delegation didn’t like – oops) and plush carpets. There was also peeling wallpaper and the shower flooded the whole bathroom.

Something weird happened: as I was settling in, room service rang and set up this elaborate set of drinks and cookies in the room. It was well and good until I excitedly rang my boss and asked if he was enjoying the complimentary drinks. (He wasn’t.) Then I realised that the welcome card had the wrong name on it! Horrified, I called our local representative office who booked the rooms for us to check if that was the name of the secretary doing the booking. (It wasn’t.) So I took their advice to “just whack.” and did exactly that. If you didn’t mind the odd service, the InterCon Le Grand is a nice though horribly over-priced place to stay. Thankfully, we had a free upgrade so the rooms were expensive but not quite horribly expensive for the company.

We had a while to wander about town and enjoy some cakes at Laduree, which was thankfully still open on a Sunday.

It’s such an institution there and if you haven’t tried their macarons, you haven’t really tasted one before. Their desserts are all very yummy too.

Thereafter, we went for a bit of a meander through town, passing by the Place de la Concorde and the gardens in the area. There were so many people out in the later afternoon after the shops were closed, simply enjoying the sun. While it was inconvenient for us that we weren’t able to shop in the little time we had in Paris, I liked the idea of life going on in the daytime in spite of the dearth of shopping and commerce.

On the day with business meetings, it was a rush from stop to stop, with quick photos taken out of the rented car window.

When we finally got back from our business meetings, it was only to get a quick round of shopping before the shops closed. One of the incongruous ones I saw was this thoroughly modern Apple shop in an obviously old and well-preserved building.

We finished off our Paris leg of the trip with a lovely meal at Oscar Restaurant, a favourite of our local representatives. I started with a lovely giblet salad topped with a duck liver terrine. It was typically Parisienne and a much wiser decision than my earlier choices of stodgy food in Milan.

I was feeling quite heaty from all the travelling and eating (and being stuck in a boardroom for a whole afternoon without getting even a sip of water – poor organisation on the part of the hosts). The beef tartare as a main was very welcome. It was the best one I’ve had, the fresh and tasty raw beef being seasoned just right and not being overwhelmed by the pickle and onion chopped into the mixture. The fresh herbs and side salad helped lots too. By now, my dining companions were looking askance at my rather different choices and wondering what I was going to have for dessert.

I eschewed the usual chocolate puddings and ice cream and gunned straight for the Faiselle, a type of sweet cheese topped with creme fraiche and accompanied with berry coulis. It was just the right creamy ending to my dinner.

A Whirlwind Work Trip: My First Michelin Star Experience

We were very fortunate to be treated to a good dinner, my first Michelin star experience at the one-star Tano Passami L’Olio. The name literally meant “Tano, pass me the olive oil.” Chef Gaetano is very big on olive oils and treats it almost like wine in how he pairs each carefully, selecting carefully which oil he uses to finish each dish. We went for a tasting menu of sorts, starting with this amuse bouche.

Unfortunately, it wasn’t a Wow! moment, more of a “hmm this is rather good.” It was interesting how the mousse was finished of with olive oil but I don’t remember a great deal more than that.

The next dish was quite interesting – raw prawns Milanese-style marinated in citrus and anise, accompanied by pink grapefruit and cheese mousse and graced with caramelised peas. I wasn’t sure about the peas as they were semi-dry, with texture reminding me a bit of wasabi peas, just not as crunchy. I liked the fresh, fresh! prawns that were singing with the zing of the sea (go figure that out, I’m taking things up a notch – it’s a Michelin-starred place yo) and the grapefruit and cheese mousse was nice, though it tasted a bit like it was meant for baby food, but what lovely fine dining baby food it was!

Now it was the next dish that really brought things up a notch. The caramelised quail eggs on tuna mousse was a revelation. The first one after going in the mouth went crackle! pop! and there were surprised looks all round the table. Then understanding dawned and we gleefully went with the second one. First, the sensation of caramel on the tongue, as it was an egg-shaped creme brulee with crackly crust all round. Just a little pressure with the teeth and tongue and the delicately cooked quail egg burst, coating the tongue with runny yolk. The tuna mousse made for a savoury counterpoint to it all. And the raw tuna in minted olive oil? Gilding the lily with its freshness.

Our expectations went a little higher with the pasta course and we were not disappointed. We were presented with lemon risotto cooked in vegetable and milk and finished off with chocolate. I was a bit wary of this as I wasn’t sure how dessert-like a lemon and chocolate rice dish would taste. But no, this was deeply savoury, rich and wonderfully al dente. At the same time, the lemon flavour sang through and the bitterness of the chocolate balanced out the flavours. It was another eye-opener. Next time I’m in Milan, I’m coming back just for this dish.

We were surprised by how full we were getting at this stage, we really hadn’t eaten a great deal, but it shows how satisfying the food was. We were very glad that the main course came in small portions. Small though the portion was, it was somehow the perfect portion. The roe dear saddle glazed with basil and wild berries and again finished off with chocolate was excellent. It was done very rare, the way I like it, yet wasn’t bloody (which the rest of my table seemed to like more). I think the meat must have been well hung because it was the tenderest deer I’ve had. Again, Chef Gaetano had a way with traditionally sweet foods, turning them into savoury wonders. The chocolate he personally grated over each portion at the table made all the difference again in balancing out the sweetness of the sauce and tempered the deep game flavour of the venison. Wonderful.

What really won the rest of the table over (I was head over heels by then, no need for further wooing) was Chef Gaetano’s impeccable and very sensible wine pairings. He recommended two reds, only one of which I managed to get a photo of. This Humar Rogoves from the Friuli region was very reasonably priced at about €30 and was just right for the deer. In the words of the chef, it was a “sweety wine, very nice.” And indeed it was! Nicely balanced, sweet yet not overly so, it went better than expected with our deer in berry sauce.

And finally dessert. The almond cannoli filled with almond mousse, candy lemon, citrus cream and almond marmalade was lovely. The pastry was crisp and light as air and the mousse filling also light and sweetly lemony. It was a lovely contrast to the dark chocolate blob (I never found out what it really was), but the mousse and chocolate sauce was a deep, delicious contrast. It was a sly way of crowd pleasing, not particularly inventive but just the right to end a good dinner.

A Whirlwind Trip: Getting into Milan

I went for a work trip in July last year and was lucky enough that it involved a whirlwind trip of the shopping capitals of Europe, with the first stop being Milan. We took the red-eye flight which meant that we got off the plane early enough to have breakfast at a bar just before our first meeting. We were thankful for the Italian custom of drinking espresso like water and helped ourselves to copious amounts of the brew to keep us awake in the business discussions.

One of the companies we met was very hospitable and brought us to Trattoria Del Drago for a very welcome lunch. The trattoria was set in a little garden and there was a lovely relaxed vibe to it. We had a lovely white wine to go with our lunch, the Picol 2008 (14%). It was a light and crisp sauvignon blanc with a lime flower nose and plenty of slate in the finish. It was a lovely accompaniment to our appetiser.

And what an appetiser it was! A typically Milanese starter of seafood carpaccio, this is Italy’s answer to sashimi. There was impossibly fresh salmon, tuna and white fish with two types of prawns. It was all dressed lightly in olive oil and was wonderfully tasty, each bite bursting with the sweetness of the sea. I would definitely go back there just for this dish, far away as it may be from the touristy areas of Milan.

My main was an orecchiette in a tomato cream sauce and a meat I cannot recall, probably chicken. Sadly, it wasn’t mindblowing and it was forgettable in my seafood-dazed, jetlagged stomach.

Our last meeting was, curiously, in an old Roman building that housed the Milanese headquarters of a high tech company . We got through that aided with plenty of hot espresso from thermos flasks, drunk by the shot in tiny plastic cups. We thankfully sank into Hotel Spadari al Duomo, probably the most reasonably priced 4-star hotel of that standard in the area. It was a lovely and very modern hotel, with large enough and very comfortable rooms.

In contrast to the Duomo just around the corner, even the artwork on the walls was modern. I liked how the minibar was included in the price of the room (non-alcoholic drinks only), so I didn’t have to worry about finding a convenience store for water. It was a lovely touch especially coming in on a hot day.

But the feature I liked best was the shower. There were three showerheads in there: a regular handheld shower head (not shown), a rain shower and a waterfall shower! It was fantastic standing under a wall of warm water after a long, long day simply enjoying the pressure of water against skin.

It was a great hotel with very prompt and excellent service, from emailing for reservations to getting our excellent breakfast every morning to making reservations to depart for the airport. Well worth it!

But no rest for the greedy. Before long, we had to regroup for dinner. We went for an early dinner nearby so that we could head back to crash out. An institution and therefore tourist hangout in the area was Trattoria Milanese, a pretty down home type place with unfortunately less down home prices. Still, it was considered reasonable for the area.

We started off with a mix of appetisers. On my plate are parma with melon; tomato with mozzarella and basil; and half a perfectly ripe, luscious summer fig. While not super fantastically good, I think the ingredients travelled far less than it would have if we had the meal back home in Singapore, making it fresher and tastier somehow.

I made the classic glutton’s mistake of ordering osso bucco with risotto. Mind you, it was yummy and very well made, especially the osso bucco with its unctuous marrow just begging to be sucked dry. The risotto was no slacker either, al dente and richly aromatic. I managed to finish about a third of the plate and tried to parcel as much away to my dining companions as possible. It was such a pity that I couldn’t take away any for later.

Full to bursting as I was, my greed yet again overreached and I found myself not simply ordering apple sorbet for dessert, but also nodding amicably when the waiter asked if I wanted it doused in Calvados. Unfortunately, the sorbet wasn’t at all tart and was a bit flat on taste, and the apple liqueur was more bitter than aromatic. Still, it sozzled me nicely and at the end of the meal I had to walk carefully so that I wouldn’t stumble on the cobblestones and fall flat on my face in front of the highest ranking person in my organisation.

Thankfully, I made it back to the hotel in one jetlagged, sleep-deprived, espresso-ed out, stuffed-to-the-gills and pretty much sozzled piece. Another lovely waterfall shower later, and I was fast asleep, dreaming of my weekend to follow.

Crab Biriyani at Heritage Bites

DC and I took his parents out for Indian. We’d heard about the crab biriyani at Heritage Bites and were very eager to try it out. The restaurant itself has a very understated decor – modern with Indian touches. Its simple layout adds to the spaciousness and helps in getting the attention of the waitstaff. DC started off with a jaljeera, a drink with mint, lime, cumin and chilli. I liked the crispy bits floating at the top, they stayed crispy throughout, which is quite amazing considering it’s soaking in the drink. What I didn’t like was the drink itself. It tasted like watered down green chilli sauce to me. Pass.

We had some starters to begin the meal, a combination platter of chicken tikka, tandoori chicken, prawn and fish. The morsels were tender and well-marinated, though ultimately not as memorable as the mains.

For mains, we had the Punjabi mutton dhabewala ($15), which was very tender pieces of goat simmered in a thick tomato-based curry. I didn’t get much of it because DC and his dad slurped most of it up! No great loss to me because I was most enamoured of the palak paneer ($15). It was incredibly smooth and creamy without being heavy, and had a tart tang that made it taste almost like tomato (green tomato?). The paneer (mild yogurt cheese) cubes were just the right consistency of yielding yet chewy to the bite. It was really excellent when wiped up with plain naan ($3), probably the best naan I’ve had in recent memory. It was quite thin and amazingly crisp, yet despite its thinness had a soft, slightly al dente centre. If not for the crab biriyani ($25) that followed, we’d probably have ordered one each. Oh yes, there was another dish with okra – I can’t remember what it was exactly, except that it was decent. Too bad that the other dishes completely stole the show.

And then the piece de resistance! The crab biriyani is da bomb. It is such a great idea: cleanly shelled crab (no nasty jaw-jarring bits at all!) layered with fragrant basmati rice and cooked to a beautifully spiced finish. Add some curry gravy to moisten the thing and you wouldn’t even miss the raita that they forgot (they later included it in the portion we took home). There was a lot of moist, fresh crab in the biriyani, each spoonful had plenty of crab to feel its texture on the tongue and fully taste the yummy crustaceousness of it. It’s such a great idea for a lighter biriyani. I’m definitely coming back for this.

We were so stuffed that we had to take back a portion of our crab biriyani. But that didn’t stop us from ordering the jalebies ($8). These little fried dough coils soaked in fragrant syrup were quite special: crisp throughout and not tooth-achingly sweet, the syrup was spiked with some lemon juice to round off our dinner on a yummy sweet-sour note. Be warned that each jalebie is quite small, so it may not be the value you’re looking for.

Nonetheless, we had a very good deal because the place was running a 40% discount promotion on all orders made between 6-8pm. Get there for your crab biriyani fix!

Brasserie Wolf

Brasserie Wolf is a bit of a dark horse. Even though it’s been around for ages, we rarely think of this place when we go to Robertson Quay. This time we stepped in after a first choice wasn’t open in time for our hungry stomachs. It sure surprised us with the decent quality of food here.

My starter of fried goats cheese was rather quotidian. I’d rather have the cheese fried on its own or at most coated with beaten egg rather than battered. Eating it this way was oddly reminiscent of fried ice cream. The dressed salad was very good though.

DC’s beef tartar was a winner. At first I wasn’t sure about the tartness from the chopped pickle, but was soon won over by its fresh flavours. I especially liked how fine they chopped up the mixture as most places do it slightly chunkier. This way, the flavours melded very nicely and the soft, meaty yet light mixture contrasted fabulously with the crisp mini toasts.

DC had the braised crispy pork trotter and he fairly swooned with how good it was. I don’t know how they did it but they braised the pork so that it was meltingly tender yet the top was crisp just as promised in the menu. What really caught my attention was the sauce, it was reduced so much that any more and the chef wouldn’t be able to scrape it out the of the pot. Oh the intense flavours redolent of pork and wine! Coupled with the mushrooms, this was a dish made in heaven.

Now my main hardly disappointed. I had the veal chop, a giant hunk of meat on the bone smothered in mushroom cream sauce and paired with mashed “beaucoup de beurre” potatoes. This really hit the spot for me as the veal was done nicely medium rare so that it was tender and very juicy. The mild flavour of the veal harmonised well with yummy forest mushrooms and the light cream sauce. The mashed potato was heart-stoppingly good. It was so smooth that it had to be a 1:1 mix of potato and butter.

This was one of the rare times that we both decided that our own main was the better. We picked well and we’ll definitely visit again soon!

Private Affairs

DC took me to Private Affairs one Friday night to cheer me up after a stressful week. We weren’t sure about whether this place would last as we were the only ones there that night. We opted for the Luscious Dinner 4-course set ($98++). DC had a duck carpaccio that he liked a lot but didn’t leave a lasting impression on me. My Alaskan king crab, though, was wonderful. It really was lusciously seafood-y and briny, and bursting with fresh juiciness. The avocado mousse and passionfruit cream had just the right level of richness to complement the crab and the squid ink tuile provided a nice bit of contrast with its delicate crispness.

For mains, DC had the Maine lobster. When I tried it, I almost regretted ordering what I did because the lobster, like my crab appetiser, burst with fresh, well, lobster flavour. It wasn’t your typical vaguely rubbery tasteless boiled lobster. This one was expertly cooked in a buttery foam, making me want to devour it shell and all. In fact, I think DC gnawed as much of his lobster shell as he could!

Remember I almost regretted my order? But I didn’t. My main course of Welsh lamb loin held its own. Again, it was expertly cooked so that the lamb loin was tender and flavourful. Accompanied with the soy bean mash and the rich, intense jus of lamb and olive, this was very very good. (Unfortunately it paled against another dish I’ll blog about next time, but that’s a story for another time.)

Our third dish was a pre-dessert. DC had a yummy cheese platter and I had a sorbet. Both were competent though not particularly anything to rave about. Plus, the lighting in the restaurant is so dim that it was impossible to get good pictures anyway. Good thing we were the only diners that night so we took pictures with flash whenever the wait staff weren’t looking (!).

For the real dessert, DC had peach tofu with salted caramel and lemongrass ice cream. The purple thing is a lavender sheet, which I felt tasted a bit like one of those  portable soap sheets for washing your hands. I liked the tofu a lot. It was very tender and smooth, more like tau fa than actual tofu. It was a bit like eating peach-scented egg tofu that was sweet.

I had the chocolate mousse with miso sponge. The miso sponge was a very inventive touch to an otherwise tired dessert. I’m so glad he didn’t go down the molten choc cake route. Here, the miso sponge was very tender and very savoury, making for a lovely contrast to the sweet chocolate mousse and the deep flavour of the dark chocolate chips. It’s a pity he put pop rocks in the dessert. The dark chocolate “sand” is a bit overused in molecular gastronomy and I really don’t like the popping on my tongue.

That dinner was good enough to send us back to Private Affairs a few weekends later for a semi-buffet brunch celebration. It was good value for money at $68++ per person without alcohol. The food wasn’t quite as exquisite as the dinner we had, but it was still pretty darn good. The idea was that we ordered whatever we liked from the brunch menu, from typical breakfast staples like mini-muffins, yogurt, pancakes and eggs, to brunch staples like fresh oysters, to more exciting things like cured sardine, panfried scallops and coffee ribs with a twist. All these we could order as many servings as we liked. For the main course, each chose one. Everyone liked their own main courses and I naturally felt that mine of melt-in-the-mouth sous vide French chicken was especially nice. If you want a taster for Private Affairs, the brunch is the way to go.

Unfortunately it was third time unlucky when DC and I returned to Private Affairs. We tried out their celebratory 8-course menu for October consisting of greatest hits in the chef’s repertoire. There was the familiar course of many dishes, with some good and many others falling flat. I was deeply disappointed by the lack of quality control and lack of service recovery for a restaurant that aspires to this calibre. First, even though I made an email booking just like the previous brunch (with acknowledgement from the PR manager), they lost our booking and took a while to get us a table. It didn’t help that, unlike our first experience, the restaurant was full as there was a big group taking up much of the restaurant with a separate special menu and a few other tables doing the a la carte option. The kitchen was obviously not ready for this onslaught and some dishes came out different from described in the menu. For instance, the raw Hokkaido scallop with lettuce gazpacho jelly came with  a pool of bright green liquid instead of jelly and there was no way of eating the dish properly as we weren’t provided with spoons. We just had to fish out the scallop from the watery liquid and the wait staff later whisked away the plates, only looking slightly puzzled when I pointed out that we had no spoons and weren’t able to enjoy the dish properly.

No less, two dishes stood out. The kurobuta pork cheek with blood orange jelly was very good. I’m not sure about the slightly odd gel-like texture of the accompanying avocado gnocchi but the pork cheek itself was done so that it was meltingly good. The slightly tart and sweet blood orange jelly really lifted the flavour very well.

The second noteworthy dish was the apple cake dessert. Again, there were parts that I didn’t quite agree with, in this case the apple cinnamon spaghetti. DC liked it a lot and slurped up mine too, but I found it a bit too molecular gastronomy, and too reminiscent of past biology experiments dealing with calcium alginate gels. It was a cute idea nonetheless. What blew me away what the apple cake itself. It was essentially an apple-flavoured cross between mousse and semifreddo, with apple jelly in the middle. I loved how it was just on the verge of melting and how the clean green apple flavours shone through very well. The lemongrass ice cream was a lovely light yet creamy accompaniment to the cake. Thumbs up!

It was the last part of the dinner that disappointed me. The PR manager came over to chat with us. No matter that she didn’t apologise for the mix-up in reservations. She asked how the food was and I responded that it was patchy. Taken by surprised, she asked why and was reluctant to probe much further after I asked how much she wanted to know, showing her the brief notes I took on my slip of printed menu. She did concede that the lettuce gazpacho was meant to be a jelly and not liquid, and then said that the chef designed the menu out of popular dishes. Telling us that other people liked the menu certainly does not make me like a less than ideal experience more.

In short, this restaurant has lots of potential as the chef is obviously very talented. His kitchen and staff do on occasion let him down. It took me a long while to decide to post about this place as I have very mixed feelings about it. If you take my experience as a gauge, you’d probably get a good experience two-thirds of the time. For me, unfortunately, I’m not going to come back for a little while.

Smokey’s

We saw Smokey’s one of those days wandering in the Joo Chiat area and it was a nice coincidence when Fee suggested going there for dinner. As it name hints, it specialises in smoked barbecued items. For starters, we had jalapeno poppers, those breaded and deep fried mild green chillis stuffed with sin. Oh my the cream cheese oozing out really worked, gimme more!

Fee insisted on ordering a serving of fish and chips despite my misgivings that this was a smokehouse specialising in ribs for crying out loud! Boy was I mistaken, these are possibly the most unique fish and chips ever. They’d somehow been marinated in smoke, then battered and deep fried till almost ethereally crisp. The fish was smooth and tender, almost nostalgic in its old school fish finger-like consistency. It was the combination of smoky marinade and really great fish and chips that won me over. In fact, this to me was the best dish of the night. The fries were also good, crisp outside and fluffy inside, though they didn’t hold up once they got cold. The coleslaw was very decent, with both white and purple cabbage. I liked that the veg tasted fresh and the crunchy stuff wasn’t overwhelmed by onion. Thumbs up!

The star of the show was meant to be the ribs. DC wanted the St Louis ribs, so a full rack it had to be.  I must admit they were well marinated and quite nice. Too bad they were rather dry, as it they’d been left on a low barbecue for too long. No doubt there was a disclaimer in the menu that the ribs here weren’t pre-cooked and therefore wouldn’t fall off the bone in tenderness. But these fellas were dry and hardly a shot from tenderness! It was a disappointment to me, especially after the fish and chips stole the show.

Be odd. Come here for the fish and chips. Oh yes, the portions are big too. A full rack of ribs, a portion of fish and chips and the jalapeno poppers stuffed up two big eaters and two medium eaters big time.
