Moving to the Next Stage AKA The Post about Cooking, but with No Recipe

I’ve just entered a new stage of life, and getting used to it has naturally taken some time. DC and I have moved into grandma’s old place for the time being and it’s wonderful finally having a kitchen all to myself again. Getting settled and getting used to our surroundings has taken a while. It is an old place after all as we’ve dealt with our fair share of pests, from ants to cockroaches and even nasty rats. But the best part is the large kitchen and the pandan growing practically wild at the back. I’ve been spending plenty of time catching up with my cooking and now have a backlog of posts to work through. While that’s an explanation, it’s not an excuse for neglecting this blog.

I’ve stocked up my kitchen with all sorts of herbs and spices and bought a massive 40 inch wok from Buffalo (great for fried rice!). DC contributed his sturdy old Tanyu claypot that is, sadly, chipped on the cover. DC’s aunt called one day and asked if we’d like to take a standalone stove with oven off her hands. We of course greeted that offer with great enthusiasm. I wondered for a while how to justify paying hundreds of dollars for a Kenwood chef mixer, till we looked in the spare room and found grandma’s old one. Checking online, we realised that the mixer was older than me! So that was me a few weeks ago, and I’ve been happily stocking up the freezer since.

Today, I made some of my favourite watercress soup, this time modified with chicken-white wine stock from last night’s poached chicken breast, plenty of bacon, a carrot and a little more butter. DC must’ve been pleased that I finally got round to using his Tanyu pot, I see why he loves it so much now! Lunch was the soup with salad greens and wheat berries dressed in anchovied mustard. As if I’d not pottered around in the kitchen enough, I laid down even more things in the freezer. Previously, I’d processed lots of seasoning items and put them in the freezer for later, like pureed ginger, pureed shallots, sliced galangal, sliced red chillies and calamansi halves. I rounded off the collection by finally laying my hands on kaffir lime leaves, fresh bay leaves and young ginger. Those again went into ziploc sandwich bags for removing bits later whenever I want a quick meal going.

Mid-way through the tedium of preparing these, I checked out the Saveur video on how to skin a head of garlic in less than 10 seconds. Of course, it was because I had a few heads of garlic to process too. Sadly, it didn’t work for me because I didn’t have any suitable metal or plastic bowl. DC suggested the wok and its lid. I could hardly lift it, let alone shake Dickenses out of it. But DC could, and soon he was dancing round the kitchen (good thing it’s a big one!) having fun clanging it about. It worked fairly well, though of course you’ll have to live with bruised cloves of garlic. That’s not a big problem if you’re chopping them up to stick in the freezer later.

In between all that, I managed to bake a loaf of bread (which I need to tweak slightly before blogging about it) and a failed fig and blackberry tart. I was trying to use up some fresh figs that were past their prime and chanced upon an interesting pastry recipe that called for cornmeal (which I was dying to get rid of). It was too juicy and came out so soggy that most of the pastry didn’t get a chance to brown, though DC said it was like eating fig and blackberry crumble. I suppose the blackberries saved the day.

And the point of this post? To say that I’m still alive and cooking. And will get round to posting about recent travels, eating and cooking real soon. Bear with me!

Bunker

Bunker is a restaurant tucked in a little known corner in Changi. It’s right next to Johore Battery (whut? I hear you say), just beyond Changi prison complex and directly opposite Selarang Camp.  For the history buffs out there, the Johore Battery was the only 15-inch gun battery that was not able to swivel round to fire on the Japanese troops arriving from the north.  I guess the Sultan of Johore didn’t like the idea of the guns that he was paying for being able to turn in his direction.

Rather incongruously, Bunker features a very nice chill-out open-air bar and an indoor fine dining restaurant that serves decent western food.  Unsurprisingly, given the location, Bunker has a monopoly on fine dining options in this part of Singapore and the place was quite full even though we were visiting on a weekday.

The first course we tried was the rather ubiquitous escargot, which was alright but nothing special.  DC didn’t think the hazelnuts stuffed into the escargot shell added that much to the flavour. I don’t like the escargot because of the car tyre texture, and this didn’t change my perception.

Next up was a field mushroom soup, which I thought was good because of the clear, strong mushroom flavour. Then again, I’m a sucker for mushroom soup because DC didn’t find it very special.

The seafood salad was a bit better, as it had nice large prawns in it.  However there was a tad too much oil drizzled over the salad which had the effect of drowning any other flavour the dressing may have had.

For the main course, we had the Asian-style seafood spaghetti, which was actually spaghetti in some sort of laksa-tom yam concoction.DC liked this a lot.  I guess it was like laksa, but had a bite of sourness to it mixed in with the creamy texture to create a slightly unusual taste profile.

You’ll notice we were very restrained in our ordering this time.  I guess we were on a diet!

Bunker is a good idea, especially for people who are stuck out in the Changi village side of Singapore and are looking for a finer dining option.  The open-air bar is really lovely and you should try to get one of the private gazebos for a really romantic dining experience.  Bunker also offers interesting and decently-priced weekday set lunches that offer a decent alternative to the usual local fare around the area.  Do take the opportunity to check out this place one day and chill out among the remnants of Singapore’s WWII history!

A Long Brunch at St Regis

My brother treated us to brunch at the St Regis and what a champagne brunch it was! It was well-priced compared to other hotel brunches at $170++ with champagne and $138++ without. What I didn’t like was that there wasn’t an option with just one glass of champagne, that I would’ve gone for. They offered a la carte glasses of champagne for $40, which made it more expensive than the option with free-flow champagne. Pfft.

No less, the spread was excellent. While not quite as extensive as other places, there were very few filler dishes. I liked also that the quality of the ingredients was excellent. Case in point were the oyster and ham selections. There were three types of oysters from various regions – all were good, and the memorable ones were the fine de claire from France. I love their briny, minerally flavour. The ham selection was more impressive, with four or five different types. I remember the parma and some of the air dried beef types, but everything was blown away by the entire leg of bellota ham carved out in tempting slivers. The flavour of the fat from acorn fed pig blew everything else out of the water. You have a choice: either eat the other hams first or go straight for the bellota. No other way.

What made this buffet special was that the food wasn’t all from the buffet table where we helped ourselves. The waiters regularly came round with small bites, such as this sampler platter of (L-R) tomato gazpacho, tuna tartare, foie gras in the style of creme brulee, deep-fried silver bait, and marinated olives. I enjoyed the gazpacho and tuna tartare a lot – so refreshing, while my mum and aunt adored the foie gras. There were plenty of other yummy bites brought round, including cubes of braised beef cheek, deep-fried prawn in a pastry net, pan-fried foie gras and truffle risotto. All very good.

There was plenty more in the buffet spread, including an inventive quinoa salad, heirloom tomatoes and a good assortment of salads, from seafood to pure vegetarian ones.

The mains were a la carte and each person could order only one dish. After the incredible spread from the buffet line and the bites brought to the table, I think one would be hard pressed to even contemplate finishing two mains anyway. I had the beef tartare (this dish seems to feature regularly on this blog) with truffles, which was a good rendition, though the flavour of the beef could have shone through more strongly. Perhaps my palate had been jaded by then. Perhaps the best options would be either the beef tenderloin or the Hokkaido scallops, if they don’t change the menu every week.

We were stuffed by now, but had to press on. There were desserts aplenty for us to get through. It all seemed to pass in a blur, but the standout was the giant raspberry macaron. Here was one of the few places that did macaron well and accompanied it nicely with good produce. The raspberries were tart and on the verge of sweet, a good foil to the sugary macaron. The rest of the desserts were decent, the only grouse being that the fresh fruit selection wasn’t very good.

A Good Brunch at db

We’re not sure how it happened, but one Sunday I found myself at Daniel Boulud’s swanky cafe at Marina Bay Sands with DC, Shinta, KK and Eeyore. We opted to share some starters and then proceeded to our own main courses. The first appetiser was the quail ballotine en croute ($22), basically a baked pate of quail and foie gras enclosed in a pastry shell. It was well executed and tasty. Maybe I’ve had too much airline food but this reminded me a lot of the stuff you get on the plane if you eat just the quail part. But with the foie gras centre, things are all good and yummy. I quite liked the pickles at the side, especially the bit of shiitake pickle – a refreshing change to the usual carrot and cucumber pickle.

The spicy tuna tartare ($23) was good in that the ingredients were impeccably fresh and flavourful. The chef had a very light hand in the spices as it was hardly spicy to my palate, yet paradoxically heavy on the salt. Perhaps he was going for the cured salmon style while I was expecting more sashimi salad.

The chop chop salad ($15) cost more with shrimp ($21). We counted 4 shrimp, making them $1.50 each, which isn’t too bad considering that they were, as is the standard at this restaurant, fresh. What I enjoyed throughout the meal was that every ingredient in each dish seemed to burst with freshness and was pretty much picked at its peak. I normally tolerate bits of wilted salad leaves here and there, sometimes even at the best places, but at db, it seemed like they did a proper freshness QC. Very good! Here, again, the salad was very tasty and fresh, though nothing inventive or mindblowing. $15 for a fresh salad with watermelon, sweet and juicy though they were, seems a bit steep to me.

For mains, DC went for the piggie burger ($24) which had a beef patty topped with pulled pork. My tasting portion of beef patty was well seared on the outside and nicely juicy in the outside. I didn’t taste much pulled pork and think the patty is delicious enough to have on its own. Maybe I’ll go for this one next time.

KK and Eeyore both had the original db burger ($35), which had braised short ribs in the middle of the meat patty and foie gras on top. I didn’t find my tasting portion very special and didn’t even notice much of the short ribs. One thing though was that the foie gras was tiny and I was very lucky that the piece KK cut for me had a tiny sliver that barely caught my attention had it not fallen onto my plate. But the fries at this place are da bomb. I think they’re probably the best fries I’ve had in recent memory. These are definitely twice fried, they’re super crisp on the outside and somehow slightly waxy and moist on the inside. I wouldn’t call it fluffy, but somehow the texture worked really well. The flavour was great too, and they salted the fries just so. I wonder if they put beef or goose fat in the oil to make it taste that good.

Shinta had the barramundi grenobloise ($34), again an impeccably seasoned dish. My tasting portion of fish had a lovely crisp crust of skin that really added to the juicy fish. Excellent.

Finally, my dish. I went for the grilled yellow fin tuna ($36), which I felt was the weakest link of the main courses. The tuna was of decent quality. I’m belabouring the point here, but the produce offered at this restaurant is faultless. However, the flavour of the tuna somehow didn’t sing and I felt that the corn fricasee was a tad too stodgy despite being lifted by the spicy, mustardy watercress. Plus, I could hardly taste the hedgehog mushrooms that I ordered the dish for (yes I put dishes with mushrooms at the top of my order list). While it was a decent rendition of tuna, it was sadly very forgettable.

For dessert, we were stuffed and none of the other desserts appealed to us, so we went for the warm madeleines for the table to share ($8). Considering that the rest of the dishes were fairly pricey, we were expecting no more than one madeleine per person in that portion. We were very happily surprised that the madeleines came piping hot instead of warm and there were plenty to go round. Even Shinta, who was on a no-carb diet, dipped in and there were so many that no one fought over the last piece (a rarity in this crowd). I liked how each delicate little cake had almost crisp edges of darker golden brown that really added to the tender texture of the morsel. The subtle orange peel flavour added to the yummy ending to the meal.

I like db Bistro Moderne and think it’s got good, fresh, well executed food and efficient, attentive service. Price-wise, it’s not cheap as we paid $66 per person for all the food above plus a glass of wine and a fruit punch (don’t order the fruit punch, it tastes just like the type you get at post-event buffets). However, I’d say it’s quite worthwhile, as opposed to truly value for money, as the produce really is fresh (there, I’ve said it yet again!). I’d return, though probably for a chi-chi splurge than for a regular work-night dinner. Oh yes, and I’d return for the fries!

Quick Eats: Tsuru Tsuru Tei

DC and I found ourselves at The Central one work night. Despite wanting something light, we were lured in by the siren call of the deep-fried black pig ramen. I thought to order a salad to help lighten the meal and ended up ordering the only salad on the menu: avocado salad ($7.80). At least there were vegetables. I liked how the leaves were fresh and there were quite a lot of avocado chunks. The onsen egg was a lovely touch to top off the salad, I love eggs with still-runny yolks and barely set whites. Yummy!

And now for the piece de resistance, the koumi ramen ($15.80). I apologise for the poorly composed photo. It was a work night, it was late and I was tired. The basic ramen below the rack containing the deep-fried pork, though not among my favourites, was decent. The noodles were fairly firm on arrival but got soggy towards the end. You just have to eat fast to enjoy the firm texture. The soup was a decent tonkotsu style broth, very milky and unctuous with plenty of collagen dissolved in it. I think it had loads of msg too, so watch out before you over-indulge.

Ah… and the thing that lured us in! The deep-fried pork rib was fairly decent, though not as crispy as we’d anticipated. Still, the meat was substantial and tender, and the batter fairly light. I’d prefer it slightly less sweet, but for something that’s not too expensive, I’m not quibbling too much.

Quick(ish) Eats: Burger Shack

We weren’t expecting to go to Burger Shack. Really, we wanted to have something a bit lighter, like the duck bak kut teh at Penang Kitchen. But we passed by and were really hungry. So we did. We went easy by skipping the fries and having a vaguely virtuous salad to compensate.

Mine was the lamb burger. It was pretty decent with a fairly juicy patty that was spiced just right so that I could still taste the lamb. I quite liked the large juicy slices of portobello mushroom in it too. Next time if I wasn’t too famished, I’d pick out half of the chunky slices of onion. Thankfully, both our burgers had lots of onion, so we ponged each other to happy death the rest of the afternoon. (Oh yes, DC had the black pepper beef burger. I thought it was OK. The sauce was quite run of the mill pepper sauce, not that I was expecting anything really special anyway.)

They tried to do the shake-shake thing with the salad, which is a good idea since you decide how much dressing to go in. It’s quite a nice Japanese-influenced one with plenty of soy sauce in it. As for the greens themselves, just take a look at the picture below and judge for yourself whether you’d like that kind of salad. It was passable for me in a pinch, but if I’m in my normal fussy mode, my response’d be NO ICEBERG PLEASE KTHXBAI. But I wasn’t, so it passed as my serving of greens for the meal. That, and the pongy onion.

It’s a great place for a fairly quick burger. Try the spaghetti meatball next time, so many people were having it, maybe it’s good. Oh yes, and the lemonade was quite decent. This place is quite decent and the wait isn’t too long.

A Whirlwind Work Trip: Summertime in Paris

The next part of our trip brought us to Paris where we stayed at Le Grand Hotel, run by the InterContinental. It was indeed a nice hotel with typically Parisian and very opulent rooms. There were soft beds (which my head of delegation didn’t like – oops) and plush carpets. There was also peeling wallpaper and the shower flooded the whole bathroom.

Something weird happened: as I was settling in, room service rang and set up this elaborate set of drinks and cookies in the room. It was well and good until I excitedly rang my boss and asked if he was enjoying the complimentary drinks. (He wasn’t.) Then I realised that the welcome card had the wrong name on it! Horrified, I called our local representative office who booked the rooms for us to check if that was the name of the secretary doing the booking. (It wasn’t.) So I took their advice to “just whack.” and did exactly that. If you didn’t mind the odd service, the InterCon Le Grand is a nice though horribly over-priced place to stay. Thankfully, we had a free upgrade so the rooms were expensive but not quite horribly expensive for the company.

We had a while to wander about town and enjoy some cakes at Laduree, which was thankfully still open on a Sunday.

It’s such an institution there and if you haven’t tried their macarons, you haven’t really tasted one before. Their desserts are all very yummy too.

Thereafter, we went for a bit of a meander through town, passing by the Place de la Concorde and the gardens in the area. There were so many people out in the later afternoon after the shops were closed, simply enjoying the sun. While it was inconvenient for us that we weren’t able to shop in the little time we had in Paris, I liked the idea of life going on in the daytime in spite of the dearth of shopping and commerce.

On the day with business meetings, it was a rush from stop to stop, with quick photos taken out of the rented car window.

When we finally got back from our business meetings, it was only to get a quick round of shopping before the shops closed. One of the incongruous ones I saw was this thoroughly modern Apple shop in an obviously old and well-preserved building.

We finished off our Paris leg of the trip with a lovely meal at Oscar Restaurant, a favourite of our local representatives. I started with a lovely giblet salad topped with a duck liver terrine. It was typically Parisienne and a much wiser decision than my earlier choices of stodgy food in Milan.

I was feeling quite heaty from all the travelling and eating (and being stuck in a boardroom for a whole afternoon without getting even a sip of water – poor organisation on the part of the hosts). The beef tartare as a main was very welcome. It was the best one I’ve had, the fresh and tasty raw beef being seasoned just right and not being overwhelmed by the pickle and onion chopped into the mixture. The fresh herbs and side salad helped lots too. By now, my dining companions were looking askance at my rather different choices and wondering what I was going to have for dessert.

I eschewed the usual chocolate puddings and ice cream and gunned straight for the Faiselle, a type of sweet cheese topped with creme fraiche and accompanied with berry coulis. It was just the right creamy ending to my dinner.

A Cambodian Bug Encounter

I’d known of this Cambodian place for a while but just never got round to trying it out until now. We started with a fairly standard pomelo salad that I thought tasted a bit too weird for my liking. While it had almost Thai flavours of fishy smoked fish, some sweet, some sour, and some chilli, it was fairly toned down in terms of the four standard flavours. There was a herb in it that I didn’t appreciate – it was a bit too earthy and bitter-smelling (though not actually tasting bitter at all), a bit like off garlic.

The other starter was much better: steamed minced pork paste with preserved fish roe. It was very unusual, like a cross between a warm pate and meatloaf. I scooped spoonfuls of the smokey, fishy meat mixture onto the raw veggies and enjoyed the almost salted egg-like flavour. I never knew that eggplant could be eaten raw and I happily walloped the spongey vegetable with the meat. It went surprisingly well.

DC saw the writeup on crickets and tarantulas on the wall and immediately wanted to try them. I told him I could probably stomach a cricket or two rather than a hairy spider leg so he ordered this off-menu. My heart sank when the deep-fried crickets arrived. The fellas were fried to a dark crisp – so much so that their carapaces were almost black, making them look like skinny cockroaches. Ewwww. Feeling slightly queasy, I attempted a few times to spear one with my fork but failed as the little buggers (literally!) were fried so hard and crisp they were impossible to spear. DC and I picked out one that looked least like cockroach and I gingerly ate its thorax and abdomen. Honestly, it didn’t taste like much aside from deep-fried. There was a very slightly sour aftertaste but not much. So there was half a cricket in my stomach and the other half – black and winged – still sitting on my plate. I hid it in my rice and hastily chewed it up, and swallowed. Then I looked up and saw DC calmly, and with great enjoyment, crunching up the rest of the plate of crickets. This is the reason why I’m a wuss and I’m with this very brave man with the appetite for adventure. If he can put up with bug-eating, who knows what other crap he can put up with!

OK so enough with the wussing out – the last dish was their signature dish of fish amok. I’d tried it in Cambodia before and was expecting something thick yet still fluid, somewhat like Thai green curry. This version was like a non-spicy otak. The flavours were very similar and the fish was moulded in a slightly runny coconut custard. DC and I both liked the delicate flavours and the soft-firm texture of the fish. Thumbs up!

We didn’t manage to get dessert as the banana sago dish I wanted wasn’t available. Service here is generally very sincere and warm, though slightly dopey and haphazard. Be patient with them and you’ll have a good experience.

Modern Thai at Kha

Hort Park is a special place for DC and me. We go there regularly but never quite during dinner time till this one time we went to Kha, a modern Thai restaurant. It’s run by the same person who does boutique hotels, one of them being Jia in Hong Kong. It’s cute how the names of the two places are linked: “jia” means “home” in Mandarin while in Cantonese, it’s pronounced “ka”. In Thai, kha is a modifier word for females to use at the end of a sentence to make it polite. (The equivalent for males is “khup”.) What a clever way to name the restaurant. I like!

I was pleasantly surprised already when they served the complimentary appetiser. Instead of the typical prawn crackers with sweet chilli sauce, they gave us popped rice biscuits with red curry sauce. It made for a zingy start to the meal.

We ordered two appetisers and a main so that there’d be space for dessert. First was the crispy catfish with sweet pork and mango salad. It was very good – tangy and slightly spicy with plenty of texture. I’ve always liked the crispy floss-like texture of catfish done this way. They did right not to mess with the classic combination of catfish and young mango strips. I also liked the extra crunch of the peanuts but felt that the pork wasn’t necessary.

Our second appetiser was banana flower salad with young coconut and chilli. I didn’t like this one as much. It still had the classic sweet-sour-spicy combination so characteristic of Thai salads, but I felt that the texture of banana flower didn’t lend itself well to a salad as it was too “siap siap” – you know that nasty tannic texture, a bit too sappy? The young coconut helped a little but didn’t help much to give interest for flavour. Interesting idea that flopped.

The main we shared was very good! It was baked half sticky chicken stuffed with coriander and lemongrass, paired with stir fried pineapple rice. The sticky chicken was marinated in some kind of sweet dark sauce hence the stickiness from all that sugar. It tasted Asian but not quite vehemently Thai. The meltingly tender chicken paired nicely with the pineapple rice for a very safe, crowd-pleasing main. I liked how they used some unpolished rice to add flavour and texture. Good call.

For dessert, we went for the baked pumpkin custard with coconut ice cream. The pumpkin custard is very typically Thai. This version was very nicely made, with smooth silky and not too sweet custard. It went very well with the rich coconut ice cream, a very nice end to the meal.

Too bad the drinks weren’t as good. We wanted to enjoy the view outside and had our post-dinner drinks there. They tasted as bad as they looked. Don’t drink the aromatic pear mojito – the pear was somehow oxidised and brown; it left a very grainy feel in the mouth. The khao lao rum looked less bad and tasted OK. It was just another sweet drink. Both were very weak, so Kha is not a place for getting smashed.

My verdict? A nice place for a romantic meal, just skip the drinks. I hear that they are moving soon. It’s a pity as the space is really quite lovely. Check it out soon!

Disgruntled Chef

We were in the Dempsey area and wanted to try something new. Disgruntled Chef fit the bill. It’s a newish place opened by a chef formerly from the White Rabbit. I don’t know about you, but I’m not very sure about the name. Something that conjures up images of an unhappy chef spitting into my food is rather disturbing. Nonetheless, DC and I took the plunge and ordered four small plates and a big plate.

The first was a spinach salad with mirin and eggplant. Decent salad dressing but nasty eggplant that was cold and somehow hard and soggy at the same time. Overpriced and not very nice.

We were on a steak tartare streak and couldn’t resist going for it. Here, the steak tartare was pretty decent too. It was helped a lot by the very excellent fries, possibly the best in Singapore. I liked how they were just about chunky yet so crisp outside and incredibly fluffy inside. They went absurdly well with the steak tartare. What I didn’t really like about the tartare was how they used half cooked quail eggs in it. I didn’t quite appreciate the texture of the solid egg whites and felt that there wasn’t enough runny egg yolk to go round.

This was followed by the crackling suckling pig that neither of us found very special as the skin was only just crispy and still on the hard side. I don’t like it when the skin gets stuck in my molars from chewing at it for too long. Oh and the big plate of roasted miso cod was so forgettable we almost wept at how insipid it was. Don’t get me wrong, it was still competently executed. It was just that the dish simply had no soul. All I remember was that the centre of the fish had a strong alcohol smell from the sake marinade. Japanese obviously isn’t the chef’s forte.

We both agreed that the most inventive, and possibly the best, dish that evening was the baked bone marrow with persillade. I really liked the idea of marrow as pate. The chef did nothing to the marrow itself, leaving its unctuousness to be tempered with the persillade according to the whim of the diner. Trying to figure out how much parsley and garlic paste to match with the marrow was part of the fun of the dish. This is something we’d definitely return for.
