Viet-inspired Chicken Rice

I was so inspired by the Viet chicken rice in Hoi An that I absolutely had to make my own. I started off on a typical Hainanese chicken rice base. Not having access to the type of chicken (most likely cornfed) that coloured the rice yellow, I improvised by adding turmeric to the rice base. For the chicken, I poached it the Hainanese way. However, the toppings were very much improved with plenty of typically Vietnamese herbage. Even in the absence of Hainanese chilli sauce, I thought this was a winner. It also passed the family test: every grain of rice was gobbled up even though I deliberately cooked more in the hope of leftovers. I can imagine it being even more magical with Hainanese chilli sauce.

Ingredients:

2 cups rice

1 chicken
1 tsp salt
2 tsp sesame oil

2 tbsp oil
2 cloves garlic, chopped
2 shallots, chopped
1 thumb-length ginger, chopped
4 cloves, optional
1 star anise, optional
1 thumb-length turmeric, pounded

½ carrot, shredded
Thai basil
mint
daun kesom (laksa) leaves
kaffir lime leaves, very finely sliced
big limes, cut into wedges

Method:

  1. Wash rice and put in rice cooker pot. Measure out how much water you’d put in and keep that amount in mind for the stock to use, about 450ml. (I use the “equal finger” method: stick your finger in the rice, and add water to the same level above the rice.) Now drain the rice and set aside.
  2. Put chicken in pot and cover with water. Heat gently till just boiling and simmer for 5 minutes. Turn off fire and leave for 30 minutes.
  3. Remove chicken and set aside. Keep all stock and juices from chicken. When cool, rub with salt and sesame oil.
  4. Fry garlic, shallot and ginger in oil till fragrant, then add cloves, star anise, cinnamon and fry for a few seconds more. Add rice and fry till it’s dry and glistening.
  5. Transfer to rice cooker and and chicken stock. Squeeze the pounded turmeric over, discarding the dry turmeric pulp. Season with a pinch or so of salt. Cook as normal.
  6. Chop chicken and prepare herbage for serving.
  7. Before eating, arrange chicken on top of rice and top with carrot shreds and herbs. Squeeze the lime over and tuck in.

Serves 4.

An Almost Vegetarian Dinner

It was time we started eating slightly less fattening food. I attempted to go vegetarian(ish) for a meal or two. A trip to the supermarket got me lovely large king mushrooms, a courgette, mesclun salad and some herbs. The mushrooms ended up under the grill together with a miso-garlic marinade. The courgettes were caramelised and tossed with anchovies and mustard. Substitute capers for the anchovies if you’re going fully vegetarian, I just didn’t have capers in the house. For the couscous, make up some instant stuff with vegetable stock and stir in some chopped herbs. Here I use curly parsley (far cheaper than the Italian flat leaf type and much stronger, go easy). For the salad, I bought some mesclun and mixed in some organic tang oh (chrysanthemum leaves), then cracked in some pistachio (DC’s idea) and tossed in truffled olive oil and balsamic vinegar. It all came together to form a satisfying almost vegetarian dinner.

Garlic-Miso King Mushrooms

Ingredients:

2 king mushrooms
1 tbsp miso paste (I use red miso with konbu here)
1 tbsp dry vermouth (sherry or sake is good too)
2 cloves garlic, minced

Method:

  1. Slice the king mushrooms lengthwise.
  2. Blend the miso, vermouth and garlic till you get a spreadable paste, smear lovingly over the mushroom portions.
  3. Place under a hot grill for about 10 minutes on each side or until the miso paste just about chars. Serve.
  4. Just before eating, scrape off the excess miso because it gets quite salty.

Caramelised Courgette with Chilli

Ingredients:

2 tsp olive oil
1 courgette, chunked
3 shallots, minced
2 tsp brown sugar
chilli padi, minced
2 anchovies, mashed
1 tbsp Dijon mustard
3 sprigs basil, sliced fine

Method:

  1. Heat the olive oil in a pan and brown the courgette pieces on all sides.
  2. Stir in the shallots on low heat and cook till fragrant. Now stir in the sugar and allow to caramelise.
  3. Add in the chilli padi and anchovy, stirring till combined.
  4. Take the pan off the heat and mix in the mustard and basil. Serve.

Both recipes serve 2.

Fried Laksa

One of Mum’s friends once made a dry version of laksa for a potluck. It made so much sense to do it without the liquid for easy luggability. It was really yummy, so I had to recreate a version so that DC could try it. It was incredibly easy, although it requires quite a bit of effort in chopping everything up. The picture didn’t come out so good partly because I was trying out a new camera and partly because I lost patience with the chopping. Get some help with the cutting if you can. If not, don’t worry, it tastes much better than it looks!

Ingredients:

2 tbsp dried shrimp, soaked in water
1 piece belachan, about the size of two 50 cent coins, toasted
6 shallots
1 clove garlic
5 stalks laksa leaves
3 tbsp cooking oil
2 tbsp dried shrimp (keep dry, do not wash)
2 lemongrass stalks, sliced
2 thick slices galangal
1 packet laksa paste (I use Dancing Chef brand)
good squirt of coconut milk, approx 10 tbsp
6 taupok, cut into squares
400g beansprouts (40 cents from my market), picked over and washed
1 kg thick beehoon ($1 from my market)

Sides:
20 poached prawns, shelled
1 big fish cake, shredded
2 chicken breasts, poached and shredded
3 eggs, hard boiled and sliced

Garnish:
1 cucumber, peeled, cored and shredded
large handful laksa leaves, shredded

Method:

  1. Pound the soaked shrimp using a mortar and pestle together with the belachan, shallots, garlic and a handful of laksa leaves.
  2. Fry the dried shrimp in hot oil till crisp, taking care to put them all in at the same time. Remove promptly from the oil as the shrimp burn easily. Set aside on paper towels to absorb the excess oil.
  3. In the same oil, fry the pounded paste of shrimp, belachan, shallots and garlic with the lemongrass and galangal slices till fragrant, about 2 minutes on low. Pour in the laksa paste and fry till fragrant or till you start choking from the pungent chilli smell (whichever comes first). Remember to turn on the fan extractor if you have one. Still, it’s pretty much guaranteed that your whole house will reek of laksa for days.
  4. Remove the lemongrass and galangal, discard.
  5. Add the coconut milk and stir till you get a thick but fairly runny paste.
  6. Stir in the taupok and beansprouts, making sure to incorporate fully before adding in the next ingredient, then finally the noodles.
  7. Check the seasoning, adding fish sauce to taste. Garnish with cucumber shreds, chopped laksa leaves and crispy dried shrimp.
  8. Serve with fish cake, prawns, chicken and boiled egg slices on the side for everyone to help themselves.

Chronicles of MPT: Opera

I’ve been a regular at Bedok South Hawker Cenre’s Opera for a long time. The auntie who took order would take one look at me and tell me my order immediately. It’s too bad she’s not there anymore, but the auntie who makes the noodles is still there.

What I love about this stall is how healthy and clean everything tastes. It’s not your usual fishball noodle nor bak chor mee. It’s invariably full of fresh ingredients like baby romaine lettuce (which other stall uses baby romain?), sprightly beansprouts and incredibly fat free minced pork. Coupled with homemade fried shallots, good chilli sauce and excellent vinegar,  the dry version is heavenly. I could eat here every day. In fact, I see lots of old-timers order their daily fix from this stall. (For the record, it’s not the one with the queue, I personally can’t see why people like the famous fishball stall with the long queue.)

I also ask for extra vegetables for $0.50 more and they give me a much bigger bowl of soup plus extra fishballs and other ingredients. This is worth my while because it’s the only accompanying soup worth drinking. At other places I invariably leave the soup untouched because it’s just msg and water. Here, things are quite different and I always finish every drop of the soup. It’s fantastic.

What’s not so great about it? The meatballs are only a notch above run of the mill and the meepok can sometimes be soggy. Go for the meekia or meesua, both the dry version. Both are excellent.

A Rather Impressive Roast Beef Lunch

I had a joint of beef sitting in the freezer that was crying out to be turned into a lovely Sunday lunch. It’d been a long time since I’d last entertained, so I thought I’d make it slightly more elaborate than normal. I started off with bacon and watercress soup, then served the beef with mushrooms in red wine, roast pumpkin (DC’s helper made it so I don’t have the recipe), green salad and horseradish garlic cream sauce. To top it all off, I served a very successful tropical plate trifle. It was boozy, it had pineapple and passionfruit in it, it had cream, it was amazing.

So let’s start from the beginning. DC and I headed out to Choa Chu Kang the day before in search of fresh ingredients. Too bad about the poor selection at the farmer’s market, as we ended getting most of the stuff from Cold Storage at Jelita in the end. I made the soup, mushrooms and cake base the night before so that there wasn’t much work to do in the morning, just the beef and assembly work.

Here’s the beef just out of the oven, adorned by an afterthought of DC’s Irish breakfast sausages. (The sausages were from Cold Storage, we’re not yet so hardcore that we make our own sausages!)

We reluctantly let it rest till our guests arrived and got on to reheating the soup and checking the flavourings of the sauces. Eeyore, Wei and WW arrived first and we got on with the soup. To our surprise, watercress and bacon soup went incredibly well with some homemade prawn-flavoured keropok lying around. We couldn’t help but mop up jade liquid with coral crisps, proclaiming all the way that there wouldn’t be space for the beef at the rate we were going through the bucket of keropok. By the time Shinta and KK arrived, the bucket had dwindled to half its original.

As KK and Shinta tucked into their soup, the rest of us went ahead with the main course. It was so good we almost didn’t leave enough for the latecomers. Luckily, those two eat fast and soon caught up with us as they bagged their share of the good stuff.

And then came dessert. Oh my was it good. There was the tang of lime and passionfruit, the fragrance of Silver Valley pineapple, soft voluptuous cream and a generous shot of booziness. No one uttered the customary complaint of how fattening dessert was. In fact, Eeyore protested when I suggested waiting a while to digest first before serving dessert.

A testimony to how good it was? There was hardly any talking at the table, only chomping and semi-civilised requests to pass dishes around, followed by satisfied grunts and sighs. We finished lunch in a record half hour, including a Bordeaux and a Spanish dessert wine to round it all off. Then we proceeded upstairs to fall asleep while Shinta and Eeyore battled it out on Wii Super Smash Bros.

Roast Beef

Ingredients:

1.5 kg joint of ribeye
sea salt
freshly ground black pepper
olive oil
4 good quality sausages (optional)

Method:

  1. Slather the thawed beef generously with black pepper and leave to marinate overnight.
  2. Remove joint from fridge at least 2 hours before cooking. Preheat the oven to 210 ºC.
  3. Rub the outside generously with olive oil and salt, place in a foiled roasting tin. Surround with sausages.
  4. Roast for 30 minutes at 210 ºC then turn down to 160 ºC for another 30 minutes. Like this, you’ll get it medium. (See picture.)
  5. Remove from oven and allow joint to rest for at least 20 minutes before carving. Serve with the other yummy stuff.

Mushrooms in Red Wine

Ingredients:

80 g butter
6 onions or shallots, sliced
2 punnets brown mushrooms, sliced
200 ml dry red wine

Method:

  1. Melt the butter and cook the onions gently till soft.
  2. Add the mushrooms and on slightly higher heat, cook till most of the butter is absorbed.
  3. Turn up the heat and pour in the red wine.
  4. Allow to bubble for about 10 minutes or till mushrooms are nicely tender. Season to taste with salt and pepper.

Horseradish Garlic Cream Sauce

Ingredients:

2 heads of garlic
1 pot cream
1 tbsp horseradish powder

Method:

  1. Roast the garlic in a pre-heated oven at 120 ºC for an hour or till soft.
  2. Cut the base of the garlic head and squeeze out the pulp into a mortar and pestle. Mash till smooth.
  3. In a pot, combine the garlic and cream and warm gently. Do not let boil.
  4. Mix in the horseradish powder and season to taste.

Tropical Plate Trifle

[syrup-soaked cake]

Bake the cake here using lime zest instead of tangerine. Use the juice from 5 limes and 100 g of icing sugar for the syrup. Add a touch more icing sugar if you like it less sour.

[cream]

Whip the i small tub whipping cream with 2 tbsp icing sugar and 50 ml dark rum till you get soft peaks. Chill in the fridge immediately.

[fruit topping]

Add 2 tbsp of dark brown sugar to 3 pulped passionfruit, stir and chill in the fridge. Chop Silver Valley pineapple into smaller chunks than the photo (I was too lazy to cut them smaller) and chill.

[assembly]

Arrange thick slices of the cake on a suitable plate, scatter with a couple tbsp of dark rum, then dollop the rum cream lavishly over. Pour over sugared passionfruit pulp then sprinkle with pineapple pieces. Serve to oohs and aahs.

All recipes serve 7, with leftovers.
